Oven Baked Jollof Rice

This dish is a staple in western Africa.
It is basically rice in herby tomato sauce.
People from Nigeria, Ghana, Liberia, and Senegal love their jollof rice.
Oven Baked Jollof Rice
Ingredients
- 3 cups Long Grain Parboiled Rice
- 5 Sweet Long peppers (red)
- 2 Medium sized onions
- 1 Chopped Onion
- 2 to Matoes (optional)
- 1 Habanero Pepper
- 3 tbsp Tomato Paste
- ½ tbsp Ginger Paste or 1 tsp powder
- ½ tbsp Garlic Paste or 1 tsp powder
- ½ tsp Curry Powder
- 4 Bay Leaves dry preferred
- 3 Sprigs of Thyme or 1 tbsp dried thyme
- 4 Seasoning Cubes
- Salt to taste
- 1/3 cup Oil
- 1 tbsp Butter (optional)
Instructions
- Steam tomatoes, onions, peppers, then combine in a blender and puree.
- Pour oil in a saucepan, place over medium-high heat, add chopped onions till it browns.
- Add tomato paste and keep frying.
- Add all herbs (garlic, ginger, thyme, and bay leaves.
- Stir in onion-pepper blend, add seasoning cubes, and salt. Allow it to simmer covered till sauce is reduced (about 2/3 of its original volume).
- Preheat oven to 380 0F
- Boil 4 cups water
- Rinse rice to remove excess starch and pour in an oven safe bowl.
- Add reduced sauce blend, 4 cups of water, and mix.
- Bake covered for 50mins.
- Remove from oven and allow it rest for 10mins.
- Uncover, discard thyme sprigs and bay leaves. Fluff or mix and serve warm with a side of salad or sautéed vegetables.
