Egg Stew

This is a recipe suitable for breakfast.
Egg Stew Recipe
Ingredients
- 4 Eggs
- 4 Small Tomatoes chopped
- 2 Scotch Bonnet Pepper or as it suits you
- 1 Small Onion
- ½ cup Chopped Green Pepper
- 2 Cooking Spoon Oil
- 1 Sprig of Thyme or chopped fresh curry leaves
- 1 Seasoning Cube
- Salt to taste
Instructions
- Break eggs in a bowl and whisk
- In a Blender, add tomatoes, half onion, and scotch bonnet peppers and process roughly
- In a saucepan, add cooking oil of choice and place on medium heat
- Pour second half of the onions and caramelize for 3-5mins
- Add blended ingredients, throw in the sprig of thyme, then allow sauce to cook down
- Add seasoning cube
- Add salt
- Add curry leaves (optional)
- Add green pepper, stir for 1min
- Lower the heat, then add beaten eggs
- Allow egg sauce to set, then stir gently.
Notes
Enjoy with boiled yam, potatoes, bread, etc.
