Egg Stew

This is a recipe suitable for breakfast.

Egg Stew Recipe


  • 4 Eggs
  • 4 Small Tomatoes chopped
  • 2 Scotch Bonnet Pepper or as it suits you
  • 1 Small Onion
  • ½ cup Chopped Green Pepper
  • 2 Cooking Spoon Oil
  • 1 Sprig of Thyme or chopped fresh curry leaves
  • 1 Seasoning Cube
  • Salt to taste


  • Break eggs in a bowl and whisk
  • In a Blender, add tomatoes, half onion, and scotch bonnet peppers and process roughly
  • In a saucepan, add cooking oil of choice and place on medium heat
  • Pour second half of the onions and caramelize for 3-5mins
  • Add blended ingredients, throw in the sprig of thyme, then allow sauce to cook down
  • Add seasoning cube
  • Add salt
  • Add curry leaves (optional)
  • Add green pepper, stir for 1min
  • Lower the heat, then add beaten eggs
  • Allow egg sauce to set, then stir gently.


Enjoy with boiled yam, potatoes, bread, etc.
