Egg Stew Recipe
Ingredients

Eggs
4
Small Tomatoes
chopped
2
Scotch Bonnet Pepper
or as it suits you
1
Small Onion
½
cup
Chopped Green Pepper
2
Cooking Spoon Oil
1
Sprig of Thyme
or chopped fresh curry leaves
1
Seasoning Cube
Salt to taste
Instructions
Break eggs in a bowl and whisk
In a Blender, add tomatoes, half onion, and scotch bonnet peppers and process roughly
In a saucepan, add cooking oil of choice and place on medium heat
Pour second half of the onions and caramelize for 3-5mins
Add blended ingredients, throw in the sprig of thyme, then allow sauce to cook down
Add seasoning cube
Add salt
Add curry leaves (optional)
Add green pepper, stir for 1min
Lower the heat, then add beaten eggs
Allow egg sauce to set, then stir gently.
Notes
Enjoy with boiled yam, potatoes, bread, etc.
